These Turkey Koftas are a recipe I created while following Weightwatchers. As turkey/ chicken breast mince is 0 sp these were a great zero pointed snack or an accompaniment to a salad.
I have also noticed in my local Tescos that they often have turkey/ chicken breast mince with yellow stickers (at the time of writing I have 4 packs in my freezer) You can use either chicken or turkey mince for these and unless you are following Weightwatchers then it doesn’t have to be specifically the breast mince either.
These Koftas are great hot and fresh from the oven, or cold with a salad or in a wrap. You could also shape them and eat them as burgers.
- 500 g Turkey or Chicken mince
- 1 tbsp Tomato puree
- 1 tbsp Ground Cumin
- 1/2 tbsp Ground Coriander
- 1/4 tbsp Tumeric
- 1 tbsp Dried Parsley
- 1 tbsp Dried Coriander (or Oregano)
- 1/4 tsp each Salt & Pepper
- 1 Small Egg Beaten
Put all the ingredients in a bowl and mix well. I like to get my hands it and give it a good squidge to make it come together. But if you don't like mixing by hand it also mixes brilliantly in a stand blender with the flat beater hook attached.
Shape into even balls and play out on a baking tray. I add some baking paper to stop them sticking.
Cook in the middle of the oven for 20 mins. Until the inside is cooked and the outside has lightly browned. If you prefer you could also fry these in a little frylight or oil in a pan.
